With Emma’s new restricted diet, we’re searching for a wheat flour replacement for baking.
Replacing the milk and any butter is doable… but the wheat is an issue.
Lisa and I have done a lot of reading in the last few weeks, and now have a pantry cupboard full of all kinds of wheat-alternative-flours … rice flour, brown rice flour, sorghum flour, bean flour, corn flour, corn starch, potato starch, sweet rice flour, tapioca flour, etc.
We have tried a few recipes…. we’ve tried some corn meal muffins that were so-so.
I recently found a recipe on a Bob’s Red Mill (Awesome line of product, by the way) package for some walnut cranberry muffins that are wheat/gluten free, and they actually taste good, but are a bit sticky/gooey on the surface.
Lisa made some almond cookies that were basically just almond butter and almond meal, they were pretty good.
Bread is a hassle though. Without wheat, the bread just isn’t… right. I tried a pre-mix (Celimix brand) rice flour bread mix, a couple times, and it’s horrible stuff. Comes out like spongy cardboard, and tastes like it too.

A mom and her two daughters came, and Hunter went right up to the two girls and got and gave a lot of lovin’. ![]()
They have another cat of the same breed, so as long as the two cats get along OK, Hunter has found a good home, will have a kitty friend, and will get more attention from the owners. If the cats fight, they’ll bring Hunter back.
So that’s hopefully one major allergen gone… after a good cleaning and about half a year for the allergens to break down in our place.
Lisa is crying like crazy over the cat going. 
She almost had me crying too. lol
It’s a relief in some ways to have the cat gone, but at the same time, we’ll definitely miss him, he’s been a good buddy for many years.
Hopefully he’s found a good home though, and one where the owners will have more time to give him time, something we’ve been lacking in.
